Garlic Chicken

Today I am going to post the recipe for Garlic Chicken… I love this recipe a lot and even my hubby…  While in Chennai I use to go out to restaurants to relish on this particular dish but never did I ever think that  I would make this one day at home…  I loved cooking but I dint have time to do so in Chennai but here in Kuwait I have so much of time to try different recipes… Well I was supposed to post this recipe a long time ago as my dearest friend – Jensy asked me to do so… So here I am jensy to give you the recipe…  One thing that I like about Kuwait is that we get all sorts of vegetables over here… especially fresh spring onions which I like to add to all of my recipes as a final garnish…  Let’s have a look at the recipe… J



Ingredients:
Boneless Chicken – ½ kg
Spring onion  - 2 stalks
Soya Sauce – 1 tablespoon
Chicken Stock – ½ cup or 1 cube
Onion – 2 medium
Red Chilli paste – 2 tablespoons
Garlic – 20 cloves
Corn flour – 2 tablespoon
Tomato ketchup – 2 tablespoon
Oil – 1 ½  tablespoon
Salt  to taste

First clean the chicken and cut into medium size pieces. Finely chop the Spring Onions. Take an onion and cut it into 4 pieces and then slice it again in the center thus you will get big pieces of onions. Chop the garlic into small pieces.

Chilli paste: for chilli paste take 10 red chillies and put them in half a cup of hot water. Leave it for around 15 minutes then put it in grinder and make a paste of it or you can even buy chilli paste from the store.

Take a pan pour the oil. Put the garlic into it and fry it. The colour of the Garlic should become light brown then add the onions and sauté it well. Once the onion turns to light pink put the chicken pieces into it. Now add salt according to taste. Mix it well. Add tomato ketchup, red chilli paste and mix it well. Let it cook for some time. Add soya sauce. Meanwhile in a bowl mix the corn flour with the chicken stalk. Mix the chicken stock and corn flour mix with the chicken. Cook the chicken until it’s done or till the sauce starts to thicken. Finally garnish the Garlic Chicken with Spring onion and serve it hot with Chapathi , Naan or any other Indian bread.

Pinwheel Cookies

After a long time I am posting a recipe again… it doesn’t mean that I was not cooking all these days but I was very lazy to type it and post it… L  Anyhow I am here once again with my recipes and this time I am going to post the recipe for Pinwheel Cookies…  I tried these cookies as the colour and the taste attracted me to try it out… My neighbor’s kids loved it so much that every day the younger one asks me for chocolate cookies…  but before trying the recipe I would like to tell you that you need to have patience to try out this recipe… it take long time for the cookies to bind hence it would take two days for the process to be over and you can have your cookies… The recipe is mentioned below :


Butter –
Sugar – 1 cup
Salt – a pinch
All purpose Flour (Maida) – 3 cups
Baking powder – 1 tablespoon
Egg yolks – 2
Vanilla essence – 2 teaspoons
Instant Espresso powder – 1 tsp
Cocoa Powder – 3 tablespoons
Bitter chocolate – 50 grams
Milk – ½ cup

Sift the flour, salt and baking soda. In a mixer  cream the butter on medium speed until smooth. Add the sugar and mix it well. Add the egg , milk and vanilla and mix it properly.  Now divide the dough in two portions.
In one portion you can add crushed almonds or cashew and mix it properly or you can leave it as it is so that you get the taste of vanilla. Once mixed properly keep it aside.
For the second portion of dough first melt the bitter chocolate. Add the instant espresso powder and cocoa powder in it and mix it with the dough.
Keep both the dough in refrigerator for half an hour. Now take it out and roll out the 1st portion of the dough (Vanilla) into a rectangle shape on a waxed paper. Do the same with the second portion of dough (Chocolate)
Now carefully place the chocolate dough on top of the vanilla dough.  Peel off the waxed paper. Now press the dough and roll the dough like a swiss roll and now wrap the roll in a cling film and keep it refrigerated for 12 hours.
Once its done take off the cling film and with a sharp knife slice the roll into thin slices.  Heat the oven to 180C for 15 to 20 minutes. The cookies will expand a bit… Do try it out and let me know your feedback

Boondi (bundi) Ladoo - Laddu Recipe


Hi Friends... 

Hope all of you are doing good... well today to start up with I have a recipe which each and every person relishes on... Any Guess ??? Well I am going to give you the recipe for boondi Laddu.... Yummy I love laddu and mostly in Indian culture it is the only sweet which you can find in any occasion.... I have mentioned below the recipe: 




Ingredients :

Gram Flour  (Besan) – 1 cup
Water – 1 cup
Sugar – 1 ½ cup
Water – 1 cup
Cardamom Powder – According to taste or a pinch
Oil – 2 cups
Ghee – 4 tablespoon
Raisins, Cashew nuts and Pistachio – ½ cup Sliced
Ladle with holes

First take the Gram Flour and pour little water and mix it properly. Make the batter in such a way that if poured on the ladle it should drip down… Now take the oil and heat it in a pan. Once the oil is hot pour the batter and prepare the boondi.. The boondi should be crispy. Once it is done take the Water and put sugar in it and make the sugar syrup. The sugar syrup should be sticky.. In this syrup put the boondi along with cardamom powder, Ghee and the nuts… Mix it properly and let it simmer for some time in low heat… Once done remove it from stove and pour this in another vessel and start making laddus… Make sure you give it the shape when it is hot or else we won’t be able to make the laddus…  I prepared it and was very happy with the results… hope you people would try it out once… it’s really a very simple recipe…. Suji - Rava Laddu (Semoline)


Hi Friends, 

I was held up with certain works thats the reason I could not post recipes. Today I am going to post the recipe for Suji - Rava Laddu (Semolina)... Semolina is the coarse and purified form of durum wheat... Rava laddu is one of the easiest one to prepare.... There are two methods of preparing Rava Laddu... but I prefer the one I have mentioned below... This tastes good.... 

Below is the Recipe :



Rava - 2 cups
Ghee – 1 ½ cups
Sugar – 2 cups or as per taste
Salt – a pinch
Cashew – 20 pieces
Raisins – 20 pieces
Milk – ½ cup
Water – optional



First you need to roast the rava keeping in medium flame…The rava should be roasted till a brown colour is formed… When it is done transform it to another vessel and take ghee in the same pan and fry cashew and raisins… Remove them and keep it aside… add the rest of the ghee and mix the rava in this… add the sugar and mix it properly… Then add the Cashew and Raisins… At last you can either add the Milk or Water… If you want the laddus to remain for a longer period try to add water or else if you are going to consume it soon then you can add Milk in it… Mix all the ingredients properly… transfer it to another vessel and start shaping them into small balls. I am very bad in making round laddus… hope you people might have found out this from the pictures of my laddu… Store it in an airtight container. Rasmalai (Rasgulla)


Hi Everyone... Hope you tried my previous recipe... today am going to add a recipe for Rasmalai... hmm it's my husband's favorite sweet dish.... I have already showed you how to make rasgulla in my previous post (Rasgulla)... So let's start with the process of making yummy rasmalai... 

Below is the Recipe...



First make the Rasgulla, the recipe I have posted in my previous post - Link . The ingredients needed for Rasmalai is

Milk - 3 cups
Sugar - 2 ½ tablespoon
Cardamon - a pinch powdered
Almond & Pistachio - a tablespoon to garnish

First prepare the Rasgulla and then in a pan pour the Milk and let it boil... stir occasionally... Let the milk get reduced to around 2 cups... add the cardamon powder and mix well... take the Rasgulla and press it a bit to remove the syrup from it and add it into the milk... let it cool for few minutes and then garnish it with Pistachio and Almonds... Refrigerate it and serve chilled...

Rasgulla

Hi Everyone...  First of all thanks to all of you who tried my last recipe and gave their feedback... Well tomorrow being a holiday I am going to give you a recipe for a sweet dish which is very famous in India... This sweet is made or brought mainly during festive times... Its a very simple recipe but many times people dont try it...It is a syrupy sweet dish originally from Orissa. I prepared it and everyone liked it... Below is the recipe for the same...





Ingredients :

Milk - 2 litre
Lime - 2 spoon
Sugar - 2 cups
Water - 3 cups



In a pan boil the Milk first. Take the lime and mix with 4 tbsp of water and pour this into the boiling milk. Stir the Milk continuously until the whey water separates and milk curdles completely. Once the Milk curdles take a Muslin Cloth and pour the Curdled Milk into it. Keep this under tap water and wash the Paneer thoroughly to get rid of the lemon smell. Once it is done squeeze the Paneer properly to remove the excess water. 

Take the paneer and mash it properly in a rough surface to make it smooth. The more smooth you make the paneer the more good the rasgulla's will be. knead the paneer for few minutes until you get a smooth dough. Now divide the dough into equal portions and roll them into smooth balls. See to that there is no crack in the balls. Take a pressure cooker and put the sugar and water together and boil it to make the syrup. Once the syrup starts boiling add the paneer balls into it. keep the flame to minimum and close the pressure cooker. keep it for 10 mins. Once the vapour is released open the pressure cooker and you will find the rasgulla in double size. You can take it to a serving bowl and keep it in refrigerator and serve it chilled.

Bread Pizza

Hi everyone.... hope you people liked my previous post... Some of my friends told me that they tried it and it came out well for them...  Today I am going to post about a quick snack that  you can prepare whenever you are in hurry... I love pizza and this is the quickest pizza that I can make... The recipe is for Bread Pizza....



Ingredients :


Bread Slices - 2
Grated Cheese – ½  cup
Tomato Ketchup - 2 tablespoon
Paneer – ½  cup (either sliced or grated)
Capsicum – ½  cup 
Tomato – ½  cup
Chilli seeds – ½  spoon

Take the bread slices and apply the tomato ketchup evenly. Cut or grate all the rest of the ingredients. One by one put all the ingredients on top of the ketchup in such a way that all are placed evenly on bread. At last on top of the ingredients put the cheese. If you want to have more cheese add it accordingly. Now place the slices of bread in a Microwave oven for 5 min at high temperature. Your bread pizza is ready.
